Why grease trap service is mandatory

Fats, oils, and grease — FOG — are the leading cause of sewer blockages. Local sewer districts hold restaurants responsible for keeping FOG out of the public system, which is why grease trap maintenance is written into ordinance, not left to preference.

FOG ordinances

Most jurisdictions require a properly sized, regularly serviced trap or interceptor and set a maximum allowable grease level — commonly the "25 percent rule," where the trap must be pumped before solids and grease reach a quarter of its depth.

Your local sewer district

In the Sacramento metro, agencies such as the Sacramento Area Sewer District administer FOG programs, conduct inspections, and expect service records on demand. Requirements and pumping frequency vary by city and by the volume your kitchen produces.
